Tender, juicy and on the bone with a succulent marbling throughout.All of our lamb is raised by my brother in law in the heart of the rolling hills of avoca, county wicklow. and then dry aged for a minimum 10 days in our dry aging fridge. the result is the most spectacular lamb you've ever tasted.
